I wrote a whole blog this morning on another K-word—kissingcrust—but when I read Sheenah Freita’s response to J is for Johnnycake, I changed my mind.

Found these two recipes online and they’re both truly delish! Go ahead, try them both. Then go visit Sheenah’s world – while you’re there, say ‘hi’ to her for me, and kiss the cap for us both! Hey… maybe we could make butterbeer for our next Grace drink!

Today, I raise my cap to my lips because of you, Sheenah!

BUTTERBEER

Easy and quick and delish Butterbeer (serves 2):

Step 1: Measure ½ cup (4 oz) butterscotch syrup (ice cream topping) and ½ tablespoon of butter into a 2 cup (16 oz) microwaveable glass. Microwave on high for 1 to 1-1/2 minutes, or until syrup is bubbly and butter is completely incorporated.

Step 2: Stir and cool for 30 seconds, then slowly mix in 1 cup (8 oz) of club or cream soda. Mixture will fizz quite a bit.

Step 3: Serve in two coffee mugs or small glasses; a perfectly warm Hogwarts treat for two!

Involved and easy and even more so delish Butterbeer (serves 4):

Start to finish: 1 hour (10 minutes active)

Ingredients:

  • 1 cup light or dark brown sugar
  • 2 tablespoons water
  • 6 tablespoon butter
  • 1/2 teaspoon salt
  • 1/2 teaspoon cider vinegar
  • 3/4 cup heavy cream, divided
  • 1/2 teaspoon rum extract
  • Four 12-ounce bottles cream soda

Instructions: In a small saucepan over medium, combine the brown sugar and water. Bring to a gentle boil and cook, stirring often, until the mixture reads 240 F on a candy thermometer.

Stir in the butter, salt, vinegar and 1/4 heavy cream. Set aside to cool to room temperature.

Once the mixture has cooled, stir in the rum extract.

In a medium bowl, combine 2 tablespoons of the brown sugar mixture and the remaining 1/2 cup of heavy cream. Use an electric mixer to beat until just thickened, but not completely whipped, about 2 to 3 minutes.

To serve, divide the brown sugar mixture between 4 tall glasses (about 1/4 cup for each glass). Add 1/4 cup of cream soda to each glass, then stir to combine. Fill each glass nearly to the top with additional cream soda, then spoon the whipped topping over each.

      Seriously?! That would be sooo awesome. I KNOW that if go back and re-read all the instructions again I could probably figure out what I did wrong but I’m just so discouraged and frustrated that I had to set it aside for awhile. But if you’re willing – wow! What a blessing! I’ll contact you on your end of things…

      Enjoy the butterbeer -the quick and easy version is nice but the one with a dab of rum…even better.
